Peanut Butter Cookies
- 1/2 c. shortening (half butter or margarine), softened
- 1/2 c. creamy or chunk style peanut butter
- 1/2 c. granulated sugar
- 1/2 c. brown sugar, packed
- 1 egg
- 1 1/4 c. all-purpose flour
- 3/4 tsp. soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- Mix thoroughly shortening, peanut butter, granulated sugar, brown sugar and egg. Blend in the remaining ingredients.
- Cover and chill about 1 hour. Heat oven to 375u0b0. Shape the dough into 1 inch balls and place them 3 inches apart on a lightly greased baking sheet. Dip a fork in flour or sugar and press on each ball in a crisscross pattern to flatten to about 2 inches.
- Bake 10 to 12 minutes or until set but not hard.
- Immediately remove the cookies from the baking sheet.
- Makes about 3 dozen cookies.
