Healthy Three Ingredient Maple Almond Fudge
- 2 cups almond meal
- 1/2 cup natural almond butter
- 1/2 cup pure maple syrup
- 1/4 teaspoon pure vanilla extract (optional, but don't use the cheap stuff if you add it in)
- Line a baking dish (8x8 or 9x9 pan will work) with parchment or wax paper and set it aside.
- In a mixing bowl, add the almond meal and set aside.
- In a small sauce pan, or microwave safe bowl, melt the almond butter and maple syrup together until they are combined. Once combined, add the vanilla extract.
- Add the melted butter and syrup mixture into the almond meal. The mix should be very thick.
- If the mix is to wet add more almond meal two tablespoons at a time. If the mix is too dry add maple syrup one tablespoon at a time.
- Transfer to your container, spread the mix out and refrigerate for at least 30 minutes before slicing.
