Killer Meat Loaf
- 2 lb. lean ground chuck, 3/4 lb. sausage in bulk
- 3 Tbsp. butter
- 3/4 c. finely chopped onion
- 3/4 c. finely chopped green onion
- 1/2 c. finely chopped carrots
- 1/4 c. finely chopped celery
- 1/4 c. finely chopped red pepper
- 1/4 c. finely chopped green pepper
- 2 tsp. finely chopped garlic
- 1 tsp. ground pepper
- 1/4 tsp. cayenne pepper
- 1/2 tsp. white pepper
- 1/2 tsp. cumin
- 1/2 tsp. nutmeg
- 3 beaten eggs
- 1/2 c. ketchup
- 1/2 c. half and half
- 3/4 c. bread crumbs
- Heat butter, add veggies and garlic, cook until veggies dry up.
- Let cool and chill.
- Combine spices, eggs, ketchup, half and half, blend.
- Mix veggie mix, spice mix, meats and crumbs all together.
- Blend well.
- Shape into loaf, put in pan, then put pan into a slightly larger pan with some water.
- Bake at 375u0b0 for 35 to 40 minutes.
- Serves 8 to 12.
