Chocolate Zucchini
- 2 1/4 c. flour
- 1/4 c. unsweetened cocoa
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 c. sugar
- 1/2 c. margarine or butter
- 3/4 c. applesauce
- 4 eggs
- 1 Tbsp. vanilla
- 2 c. shredded zucchini
- confectioners sugar (optional)
- In a medium bowl, mix together flour, cocoa, baking powder, baking soda, salt and cinnamon; set aside.
- In a large bowl, beat together sugar and margarine.
- Beat in applesauce, eggs and vanilla until thoroughly blended.
- Gradually add dry ingredients, mixing well.
- Stir in zucchini.
- Pour into a greased 9-cup Bundt pan. Bake in preheated 350u0b0 oven for 1 hour or until cake tester inserted near center comes out clean.
- Cool slightly and dust with confectioners sugar, if desired.
- Serves 12.
