Lemon Gelatin Salad
- 2 c. boiling water
- 2 pkg. lemon gelatin
- 1 (8 oz.) pkg. cream cheese
- 1 (No. 2) can pineapple, drained
- 1 c. boiling water
- 1 pkg. lemon-lime gelatin
- 1 c. miniature marshmallows
- 1 c. pineapple juice (use reserved juice and add enough water to make 1 c.)
- 1/2 to 1 c. crushed pecans
- Dissolve lemon gelatin in 2 cups boiling water.
- Add cream cheese and mix with electric beater until cheese is completely dissolved.
- Add crushed pineapple and blend well.
- Pour into mold or square pan and let set.
- Dissolve lemon-lime in 1 cup boiling water.
- Add marshmallows and juice and mix with mixer until marshmallows are dissolved.
- Add pecans and pour over mixture. Place in refrigerator until set.
