Cranberry-Orange Oatmeal Cookies
- 1 cup brown sugar, packed
- 1 cup light butter, softened (2 sticks)
- 1 teaspoon baking powder
- 1 teaspoon ground allspice
- 1 1/2 tablespoons orange peel, ground
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 eggs
- 3 cups oats
- 1 cup all-purpose flour
- 1 cup dried cranberries
- Preheat oven to 375u0b0F.
- In a large bowl, beat all ingredients except oats, flour and cranberries with electric mixer on medium speed, or mix with a wooden spoon.
- Stir in oats, flour and cranberries.
- On UNGREASED cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
- Bake 9 minutes or until light brown. Immediately remove from cookie sheet to cooling rack or sheets of paper towel.
