Stuffed Peppers Lorena
- 6 medium bell peppers
- 1 1/2 lb. ground beef
- 1/2 c. chopped onion
- 1 1/2 c. cooked rice
- 1/4 c. diced bell pepper
- 1/4 c. seasoned bread crumbs
- 1 Tbsp. cajun seasoning
- 1/4 lb. butter or margarine
- 1/3 c. water
- 1 1/2 slices cheese
- Cut tops off peppers and save; remove seeds.
- Rinse and drain. In a 10-inch skillet, brown ground beef; drain.
- Use tops of peppers to dice.
- Add onion, rice, diced pepper, bread crumbs, seasoning and butter or margarine.
- Cook on low heat for 10 minutes.
- Fill peppers with mixture.
- Place peppers in a glass baking dish.
- Pour water in bottom of dish.
- Cover with plastic wrap.
- Microwave on Roast setting for 12 to 15 minutes.
- Remove from microwave, removing plastic wrap.
- Cover each pepper with 1/4 slice cheese.
- Let stand 5 minutes before serving.
- Serves 6.
