Potato Bacon Soup
- 2 medium chopped onions
- 1/2 (6 oz.) pkg. Canadian bacon, chopped
- 2 c. water
- 4 medium potatoes, cubed
- 1 (12 oz.) can evaporated skim milk
- 1 (1/2 oz.) pkg. butter-flavored seasoning mix
- 1/4 tsp. salt
- 1/8 tsp. pepper
- low-fat or nonfat dairy sour cream (optional)
- snipped fresh chives (optional)
- Spray a 3-quart saucepan with nonstick coating.
- Add chopped onions and bacon; cook and stir over medium heat until onions are tender, not brown.
- Stir in water and potatoes, bring to boiling and reduce heat.
- Cover and simmer 10 to 15 minutes or until potatoes are just tender.
- Using a potato masher, slightly mash some of the potatoes.
- Stir in evaporated milk, butter seasoning mix, salt and pepper.
- Cook and stir over medium heat until heated through.
- Do not boil!
- Top with sour cream and chives, if desired. Makes 6 servings.
