Angel Hair Pasta With Fresh Tomato Sauce

  1. Heat 1/4 cup olive oil over low heat in saucepan.
  2. Add garlic. Cook until it softens, not browned.
  3. Add tomatoes, nutmeg, salt, pepper, sugar and cook uncovered over medium heat about 10 minutes.
  4. Add parsley.
  5. Remove and keep warm.
  6. While sauce is cooking, line a cookie sheet with foil.
  7. Spread onions and toss with 1/4 cup of the olive oil.
  8. Sprinkle with black pepper.
  9. Place about 3 to 4 inches from preheated broiler.
  10. Cook until onions are wilted, only slightly browned, about 5 to 6 minutes.
  11. Carefully stir around a bit while broiling.
  12. Cook pasta in pot of boiling water until barely tender.
  13. Drain and rinse.
  14. Place equal portions of pasta on plates in center of sauce.
  15. Top with broiled onions and sprinkle with chopped parsley.
  16. Serves 4.
