Angel Hair Pasta With Fresh Tomato Sauce
- 1/2 c. olive oil
- 3 cloves garlic, finely slivered
- 2 c. fresh plum tomatoes
- 2 c. diced canned tomatoes
- pinch nutmeg
- salt to taste
- pinch of sugar
- fresh ground black pepper
- 2 Tbsp. dried parsley or 4 Tbsp. fresh chopped
- 3 c. peeled sliced slivered onions
- 1/4 lb. angel hair pasta
- Heat 1/4 cup olive oil over low heat in saucepan.
- Add garlic. Cook until it softens, not browned.
- Add tomatoes, nutmeg, salt, pepper, sugar and cook uncovered over medium heat about 10 minutes.
- Add parsley.
- Remove and keep warm.
- While sauce is cooking, line a cookie sheet with foil.
- Spread onions and toss with 1/4 cup of the olive oil.
- Sprinkle with black pepper.
- Place about 3 to 4 inches from preheated broiler.
- Cook until onions are wilted, only slightly browned, about 5 to 6 minutes.
- Carefully stir around a bit while broiling.
- Cook pasta in pot of boiling water until barely tender.
- Drain and rinse.
- Place equal portions of pasta on plates in center of sauce.
- Top with broiled onions and sprinkle with chopped parsley.
- Serves 4.
