Lemon Chicken With Thyme

  1. In a plastic or paper bag combine flour, salt and pepper. Shake to mix.
  2. Add chicken, shake and coat lightly.
  3. Remove chicken and save flour mixture.
  4. In large skillet warm 1 tablespoon olive oil; add chicken; brown on one side.
  5. Add second tablespoon olive oil; turn chicken and brown on other side.
  6. Transfer thicken to plate.
  7. Add margarine to skillet.
  8. Cook onion 2 to 3 minutes.
  9. Stir in reserved flour.
  10. Add broth and 2 tablespoons of lemon juice; bring to boil, stirring constantly.
  11. Return chicken to skillet. Reduce heat and cover (5 minutes).
  12. Put chicken on plate.
  13. Add 1 tablespoon lemon juice to skillet; stir and pour over chicken.
