Flat Bread
- 1 pkg. dry yeast
- 1 1/2 c. warm water
- 6 c. flour
- 1 tsp. olive oil
- 1 Tbsp. sesame seed
- 1 Tbsp. Italian seasoning
- Dissolve yeast in the warm water.
- Stir in 5 cups of flour, then stir in the rest, little by little, adding only enough to make a dough.
- Turn out on floured board and knead until dough is smooth and elastic and doesn't stick to your hands.
- Pat into a ball.
- Pour 1/2 teaspoon of oil into palm of your hand and roll dough ball around until it is coated.
- Put in bowl; cover with towel and let rise until doubled, 30 to 40 minutes.
- Punch down and divide into two portions.
- With your hands, flatten out each portion to a plate-size round.
- Brush rest of oil on top of rounds.
- Sprinkle one with sesame seed and the other with Italian seasoning.
- Put on baking sheets; cover with bowls and let rise until doubled, about 30 minutes.
- Bake in preheated 400u0b0 oven for 20 to 30 minutes until golden on top.
