Flat Bread

  1. Dissolve yeast in the warm water.
  2. Stir in 5 cups of flour, then stir in the rest, little by little, adding only enough to make a dough.
  3. Turn out on floured board and knead until dough is smooth and elastic and doesn't stick to your hands.
  4. Pat into a ball.
  5. Pour 1/2 teaspoon of oil into palm of your hand and roll dough ball around until it is coated.
  6. Put in bowl; cover with towel and let rise until doubled, 30 to 40 minutes.
  7. Punch down and divide into two portions.
  8. With your hands, flatten out each portion to a plate-size round.
  9. Brush rest of oil on top of rounds.
  10. Sprinkle one with sesame seed and the other with Italian seasoning.
  11. Put on baking sheets; cover with bowls and let rise until doubled, about 30 minutes.
  12. Bake in preheated 400u0b0 oven for 20 to 30 minutes until golden on top.
