Nut Cream Cake
- 1 c. sugar
- 1 c. butter or margarine
- 3 eggs, separated
- 2 c. cake flour
- 2 Tbsp. grated orange rind
- 2 Tbsp. grated lemon rind
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. ground walnuts
- 3/4 c. sour cream
- Cream butter with sugar, then add the egg yolks and grated rinds; beat until light and fluffy.
- Sift flour, baking powder and soda together.
- Stir 2 tablespoons of this mixture into the nuts. Fold nuts, dry ingredients and sour cream into the egg yolk mixture.
- Lastly, beat the egg whites until stiff and fold in lightly.
- Butter and flour a spring-form cake pan.
- Turn in the mixture and bake at 350u0b0 for 1 hour, or until the cake tests done. Remove from the oven.
- Let stand 5 minutes.
- Remove the spring sides of the pan.
- Dust with powdered sugar.
