Low-Fat Spinach Balls
- 1/2 cup light mayonnaise
- 1 cup egg white
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 pinch ground nutmeg
- 1 large onion, minced
- 3/4 cup parmesan cheese, divided use
- 1 (16 ounce) bag frozen chopped spinach, thawed and squeezed dry
- 2 cups seasoned herb stuffing cubes
- Combine mayo, egg whites, garlic powder, pepper, and nutmet.
- Add onion, parmesan, spinach (with moisture squeezed out), and mix thoroughly.
- Add stuffing and mix well.
- Cover and chill 1/2 hour.
- Preheat oven to 350°F Grease baking sheet. Roll spinach mix into balls the size of walnuts and place on baking sheet (they can be close together since they won't expand).
- Bake 30 minutes. Remove from pan and sprinkle with remaining parmesan. Serve hot.
