Chicken Pea Pod Salad Oriental
- 2 c. cooked spiral macaroni
- 2 c. trimmed blanched pea pods
- 12 oz. cubed cooked chicken or turkey
- 1 c. sliced green onions
- 1 c. julienne sliced jicama
- 5 Tbsp. plus 1 tsp. reduced calorie mayonnaise
- 2 tsp. soy sauce
- 1/4 tsp. pepper
- 1/8 tsp. ginger
- 2 tsp. sherry
- 8 lettuce leaves
- In a large bowl, combine first 5 ingredients.
- In small bowl, combine remaining ingredients, except lettuce.
- Pour over chicken mixture; mix well.
- Cover and chill at least 3 hours.
- Line serving bowl with lettuce leaves; spoon salad over lettuce.
- Makes 4 servings.
- Each serving provides:
- 1 bread exchange, 4 vegetable exchange, 2 fat exchange, 3 calories optional exchange and 3 protein exchanges.
