Scalloped Oysters
- butter
- 1 2/3 c. crushed saltines, divided
- 2 pt. oysters with 1/2 c. of their liquor, divided
- salt and pepper
- 1/4 tsp. nutmeg, divided
- 2/3 c. heavy cream, divided
- 1 c. crushed saltines, buttered
- Tabasco sauce
- Butter 2-quart baking dish.
- Cover the bottom with 1/3 of plain saltines.
- Add a layer of half the oysters, and season with salt, pepper and 1/8 teaspoon nutmeg.
- Add 1/4 cup oyster liquor and 1/3 cup cream.
- Add another 1/3 of the cracker crumbs and dot with butter.
- Add the remaining oysters, the seasonings and finally the remaining plain cracker crumbs.
- Top with the buttered crushed saltines, the remaining 1/4 cup oyster liquor and 1/3 cup heavy cream.
- Sprinkle with salt and pepper.
- Dash Tabasco over all.
- Bake in a 375u0b0 oven for 20 to 25 minutes or until brown on top.
