Deluxe Pumpkin Rum Pie

  1. Set oven to 400 degrees.
  2. Prebake the pie crust for 8 minutes, with the edges covered with foil.
  3. In a bowl, whisk together all ingredients, and pour into prebaked pie shell.
  4. Bake for 45 minutes (the center should be a little wobbly, but set.).
  5. Let cool to room temperature, then refrigerate for 4 or more hours (overnight is good).
  6. Serve with whipped cream.
  7. Cover and refrigerate any leftovers.
