Creole Of Sausage
- 1 pkg. hot or sweet sausage
- 2 Tbsp. butter or margarine
- 2 or 3 large red and green peppers, sliced
- 1 medium onion, chopped
- 2 medium zucchini, sliced and unpeeled
- 1 average eggplant, cut up and unpeeled
- 2 cans stewed tomatoes
- 1 pkg. fresh mushrooms, sliced and sauteed in butter
- 1 small pkg. Mozzarella cheese, sliced thin or grated
- paprika
- Cut sausage into 1/2-inch slices.
- Brown in large skillet or electric frypan with butter.
- Add sliced peppers, onion, zucchini and eggplant.
- Stir in stewed tomatoes.
- Cover and cook down 1/2 hour or so.
- Put in baking dish (13 x 9 x 2-inch).
- Cover with sauteed mushrooms.
- Place Mozzarella cheese on mushrooms.
- Sprinkle with paprika, if desired.
- (Mushrooms may be omitted, if desired). Bake at 350u0b0 until cheese is bubbly and browning, approximately 20 to 25 minutes.
