Pasta Jambalaya
- 8 oz. ground Italian turkey
- 8 oz. boneless/skinless chicken breasts, cut in 1-inch pieces
- 18 medium shrimp, shelled and deveined (may substitute 8 oz. mock crab or lobster)
- 2 c. green peppers, cut in strips
- 1 c. chopped onion
- 3 garlic cloves, minced
- 2 c. canned crushed tomatoes
- 1/2 c. clam juice
- 1/4 c. low sodium chicken broth
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/8 tsp. ground red pepper
- 6 oz. fresh spinach fettucine
- In microwave, cook separately the sausage, chicken, onions and peppers (not quite tender).
- Add cooked ingredients to kettle containing remaining ingredients.
- Bring to a boil.
- Reduce heat to low and simmer 15 minutes.
- Meanwhile, cook fettucine until tender; drain.
- Eat and enjoy!
