Cornish Hens With Mushrooms

  1. Rinse hens in cool water and dry. Remove any visible fat. Sprinkle with pepper. Saute mushrooms in oil.
  2. Add bread crumbs, pecans, onions, garlic, tarragon and pepper.
  3. Combine milk and a tablespoon of vermouth.
  4. Add to stuffing mixture to bind it. Loosely stuff hens and tie legs together.
  5. Place hens, breast side up, on rack in baking pan. Roast at 350u0b0 for 45 minutes. Baste frequently with remaining vermouth.
  6. Serving size:
  7. 1 hen. Exchanges:
  8. 4 meats, 1/2 bread and 1 fat.
