Cornish Hens With Mushrooms
- 2 Cornish hens
- 1 tsp. olive oil
- 1/2 c. bread crumbs
- 1 tsp. minced onion
- 1 clove garlic, minced
- 1/2 c. dry vermouth
- pepper
- 1/2 c. chopped mushrooms
- 1/4 c. chopped pecans
- 1/2 tsp. dried tarragon
- 2 Tbsp. skim milk
- 1/2 c. minced parsley
- Rinse hens in cool water and dry. Remove any visible fat. Sprinkle with pepper. Saute mushrooms in oil.
- Add bread crumbs, pecans, onions, garlic, tarragon and pepper.
- Combine milk and a tablespoon of vermouth.
- Add to stuffing mixture to bind it. Loosely stuff hens and tie legs together.
- Place hens, breast side up, on rack in baking pan. Roast at 350u0b0 for 45 minutes. Baste frequently with remaining vermouth.
