California Hot Chicken Salad
- 3 c. cooked, diced chicken
- 2 c. thinly sliced celery
- 1/2 c. slivered salted almonds
- 1/4 c. pimento, cut in narrow strips
- 1 1/4 c. mayonnaise
- 3 Tbsp. lemon juice
- 2 Tbsp. grated onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. crushed potato chips
- 1/2 c. grated American cheese
- sugar (if needed)
- Toss with fork the chicken, celery, almonds, pimento and mayonnaise blended with lemon juice, grated onion and seasonings. Fill a shallow greased casserole or individual ramekins.
- Mix grated cheese and potato chips. Sprinkle over salad mixture. Bake in a preheated oven at 375u0b0 for about 30 minutes.
- If using a casserole, it should be heated through and lightly browned.
