Lemon Chicken

  1. Cut chicken into strips and chop onion and garlic.
  2. Saute in butter until chicken is lightly browned, about 5 minutes.
  3. Stir in cornstarch and cook 1 minute.
  4. Add broth, sliced carrot, lemon juice and salt.
  5. Bring to a full boil.
  6. Stir in pea pods until they separate.
  7. Add parsley and rice.
  8. Cover; remove from heat. Let stand 5 minutes.
  9. Fluff with a fork.
  10. Serve with egg rolls and a fresh fruit salad.
