Cheese Corn Bread
- 1 c. white flour
- 1 c. corn meal
- 1 egg, lightly beaten
- 2 Tbsp. sugar or honey
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1/4 c. vegetable oil
- 1/2 c. finely minced onion
- 1 c. fresh or frozen corn
- 1/2 c. grated Cheddar cheese
- Heat the oil in a small skillet.
- Add the minced onion and saute over medium heat until the onion is soft and translucent. Set aside to cool.
- Beat together egg, sugar and milk.
- Combine flour, corn meal, baking powder and salt.
- Mix thoroughly. Combine flour mixture with egg mixture.
- Mix until well blended. Add corn, sauteed onions and grated cheese.
- Mix well.
- Spread into a buttered 8-inch baking pan.
- Bake at 375u0b0 for 25 minutes or until lightly browned and firm on top.
