Redfish Supreme

  1. Dress red fish, rub inside and out with salt, pepper and oil. Place on rack in roaster and add water.
  2. (Do not let fish touch water.)
  3. Cover and cook at 400u0b0 for about 40 minutes.
  4. Save drippings.
  5. To make sauce, melt butter in large saucepan.
  6. Add flour, stirring constantly until golden brown.
  7. Add finely chopped onion, celery, parsley and red pepper.
  8. Cook about 5 minutes.
  9. Add drippings from roaster, water from mushrooms and enough plain water to make a thick, smooth sauce.
  10. Saute mushrooms in butter in separate pan.
  11. Place fish in a large flat baking dish, about 3 or 4 inches deep.
  12. Cover with sauce.
  13. Add sauteed mushrooms, oysters and shrimp.
  14. Sprinkle grated cheese over and then sprinkle bread crumbs on top.
  15. Bake at 400u0b0 until well browned and bubbly, about 15 minutes.
  16. Serves 8.
