Tomato Sauce Jambalaya
- 3 1/2 c. long grain rice
- 1 small fryer, boiled and deboned
- 1 lb. cubed beef
- 1/2 lb. sausage
- 1 large onion
- 1 clove garlic
- 3 c. chicken broth (from boiled chicken)
- 1 each: chicken and beef bouillon cubes
- 1 large can tomato sauce
- 1/2 c. each: green onion and bell pepper
- 1 jalapeno pepper (optional)
- 1/4 tsp. cayenne pepper (optional)
- salt and pepper to taste
- 5 c. water
- Fry sausage and cubed meat until slightly brown in a large heavy saucepan.
- Add onion, peppers and garlic.
- Brown slightly. Add water, tomato sauce, chicken broth, seasoning, bouillon and meat.
- Simmer on medium heat for 45 minutes.
- Add rice and cook, covered, on low heat until rice is done.
- (Too much stirring will make sticky.)
