Oatmeal Cookies
- 1 c. shortening
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 c. raisins
- 1 tsp. soda
- 4 Tbsp. sour milk
- 2 c. all-purpose flour
- 2 1/2 c. quick cooking oatmeal, uncooked
- Cream shortening and sugar together until light and fluffy. Add eggs, one at a time, beating thoroughly.
- Add vanilla and salt.
- Pour boiling water over raisins and let stand a few minutes.
- Drain.
- Add to creamed shortening mixture.
- Dissolve soda in milk and add alternately with flour to creamed shortening mixture.
- Add oatmeal.
- Blend all ingredients thoroughly.
- Drop by teaspoonfuls on greased 10 x 14-inch cookie sheet.
- Bake at 375u0b0 for 12 to 15 minutes.
- Remove from pan to cake cooler immediately after baking.
- Makes 3 1/2 to 4 dozen cookies.
