Thai Fried Noodles
- 1 pkg. rice noodles, cooked and drained
- 3 Tbsp. oil
- 3 cloves garlic, crushed
- 2 eggs
- 1 pkg. firm bean curd, diced
- 4 oz. shrimp, pork or chicken
- 1/2 Tbsp. pickled Chinese radish
- 3 Tbsp. sugar
- 2 Tbsp. fish sauce
- 4 Tbsp. vinegar
- 1/2 Tbsp. paprika
- 2 Tbsp. chopped roasted peanuts
- 6 oz. bean sprouts
- 1/2 c. green onions, cut into 1-inch lengths
- 1/2 tsp. ground chili
- 1 fresh lime, sliced
- Heat oil in a wok and saute the garlic and pickled radish. Add eggs and stir.
- Season with sugar, fish sauce, vinegar and paprika.
- Add meat, bean curd and noodles.
- Toss and cook for about 10 minutes.
- Then add green onions, ground chili, bean sprouts and peanuts.
- Remove from heat.
- Garnish with additional peanuts if desired and lime on the side.
