Microwave Caramel Corn
- 4 qt. popped corn
- 1/2 c. butter (1 stick)
- 1 c. brown sugar
- 1/4 c. light Karo syrup
- 1/2 tsp. salt
- 1 tsp. vanilla
- 3/4 tsp. baking soda
- Place popped corn in large grocery sack (regular weight paper, not too thin).
- In a microwave bowl, mix together butter, sugar, syrup and salt.
- Cook in microwave on High for 4 minutes, stirring twice.
- Next add vanilla and baking soda.
- Stir until foamy.
- Pour mixture over the popped corn in the sack.
- Shake to mix.
- Cook in microwave 1 1/2 minutes and shake; cook in microwave 1 minute and shake; cook in microwave 1/2 minute and shake.
- Spread on wax paper lined cookie sheet.
- Spread evenly with a wooden spoon.
- Let cool and store in an airtight container.
- (Tin cans work well.)
