Spinach Madeline
- 1 1/2 cups spinach, frozen
- 4 tablespoons butter
- 4 tablespoons flour
- 2 tablespoons onions, minced
- 1/2 cup vegetable stock
- 1/2 cup evaporated milk
- 1 teaspoon pepper
- 1 teaspoon salt
- 3/4 teaspoon celery seed
- 3/4 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 2 cups cheddar cheese, shredded
- 1 tablespoon jalapeno, minced can add more
- topping
- 1 sleeve soda cracker, crushed
- 1 tablespoon butter, melted
- make roux with butter and flour
- add spice.
- add stock and milk.
- whisk until smooth
- add cheese.
- whisk
- add worcestershire
- whisk.
- add jalapeno
- whisk
- add spinach
- stir.
- can cool down at this point.
- to bake turn into a greased casserole
- top with crackers
- pour butter over top.
- bake 350 for30 minutes until browned and bubbly.
