Acini De Pepe Fruit Salad
- 1 c. sugar
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 3/4 c. pineapple juice
- 2 eggs
- 1 Tbsp. lemon juice
- 1 pkg. (2 c.) acini de pepe
- 3 qt. water
- 1 Tbsp. oil
- 2 tsp. salt
- 3 cans mandarin oranges
- 2 large cans chunk pineapple
- 1 can crushed pineapple
- 1 large whipped topping
- 1 c. miniature marshmallows
- 1 c. coconut
- Mix together the first 6 ingredients, cook and make custard. Cool.
- Cook the acini de pepe in the water, oil and salt.
- Drain and cool.
- Mix with custard and refrigerate overnight.
- Add the remaining ingredients to custard mixture.
- Fruit is optional.
- Can substitute other fruits. Freezes well.
