Applesauce Cake
- 1 c. butter
- 2 c. sugar
- 3 eggs
- 3 c. flour
- 2 c. dried apples or applesauce
- 1 tsp. soda (in hot apples)
- 1 lb. raisins
- 1 lb. figs, chopped
- 1 c. walnuts
- 1 c. strawberry preserves
- 1 Tbsp. cloves
- 1 Tbsp. cinnamon
- 1 tsp. nutmeg
- Cream shortening and sugar.
- Add beaten eggs. Stir soda into applesauce.
- Reserve 1 cup flour to dredge fruit and nuts. Sift the remaining dry ingredients.
- Add to the creamed mixture alternately with applesauce. Add nuts, fruit and preserves.
- Mix thoroughly.
- Bake in a greased and floured tube pan at 300u0b0 for 3 hours. Cool.
- Put in closed container and lay apples slices on top or place a small glass of wine in middle of cake for moisture.
