Oatmeal Lemon-Cheese Cookies
- 1 c. butter flavored Crisco
- 1 1/4 c. sugar
- 1 tsp. lemon extract
- 1 1/4 c. flour
- 1/2 tsp. salt
- 1/2 c. sliced almonds
- 1 (3 oz.) pkg. cream cheese, softened
- 1 egg, separated
- 2 tsp. grated lemon peel
- 1 1/4 c. quick or old-fashioned oats
- 1 egg
- sugar
- Heat oven to 350u0b0.
- Combine shortening, cream cheese and 1 1/4 cups sugar in large bowl.
- Beat at medium speed until well blended.
- Beat in egg yolk, lemon extract and lemon peel.
- Combine flour, oats and salt.
- Stir into creamed mixture with spoon until blended.
- Drop rounded teaspoons of dough 2 inches apart onto ungreased baking sheet.
- Beat whole egg with reserved egg white. Brush over tops of cookies.
- Sprinkle lightly with sugar.
- Press almond slices lightly on top.
- Bake at 350u0b0 for 10 to 12 minutes or until edges are lightly browned.
- Cook 2 minutes on cookie sheet before removing.
- Makes 6 dozen.
