Pork Chops In Gravy

  1. Trim excess fat from pork; set aside.
  2. Combine flour, paprika, salt and pepper; dredge pork chops in flour mixture, reserving remaining flour mixture.
  3. Coat a nonstick skillet with vegetable cooking spray.
  4. Place over medium-high heat until hot.
  5. Add pork chops and brown on each side.
  6. Remove to a 1-quart casserole coated with cooking spray.
  7. Add mushrooms, onion and green pepper to skillet.
  8. Saute until tender.
  9. Stir in reserved flour mixture. Cook 1 minute, stirring constantly.
  10. Gradually stir in milk; cook until thickened, stirring constantly.
  11. Stir in lemon juice.
  12. Pour gravy over pork chops.
  13. Cover and bake an additional 10 minutes. Serve over rice.
  14. Yields 2 servings.
