Blueberry Quick Bread
- 5 c. all-purpose flour
- 1 1/2 c. sugar
- 2 Tbsp. baking powder
- 1/2 Tbsp. salt
- 3/4 c. margarine or butter (1 1/2 sticks)
- 1 1/2 c. walnuts, chopped
- 4 large eggs
- 2 c. milk
- 2 tsp. vanilla extract
- 2 c. fresh or frozen blueberries
- Preheat oven to 350u0b0.
- Grease and flour a 10-inch Bundt pan. In a large bowl, mix flour, sugar, baking powder and salt.
- With pastry blender or 2 knives used scissor fashion, cut in margarine or butter until mixture resembles fine crumbs.
- Stir in chopped walnuts.
- In small bowl beat eggs slightly; beat in milk and vanilla until well mixed.
- Stir into flour mixture just until flour is moistened.
- Gently stir in blueberries; spoon batter evenly into Bundt pan.
