Raspberry Macadamia Crusted Salmon
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 teaspoon fresh ginger, chopped
- 1/2 teaspoon garlic, chopped
- 1/2 cup raspberry preserves
- 2 -3 tablespoons maple syrup
- 2 -3 tablespoons soy sauce
- 2 -3 slices bacon, chopped
- 1/2 cup macadamia nuts, chopped
- 2 tablespoons lemon juice
- Preheat oven to 425.
- Combine olive oil, ginger, garlic and saute until translucent.
- Add maple syrup, jam, lemon juice and soy sauce and continue simmering for 15 minutes.
- Chop macadamia nuts finely.
- Cook bacon until cooked through, then chop finely. Mix chopped bacon with the macadamia nuts.
- Coat salmon with sauce and then put face down into the macadamia bacon mix until coated.
- Place salmon on lightly greased baking sheet.
- Cook salmon approx 15 minutes until done (based on size of fillet).
- Drizzle with extra sauce.
