Smoked Trout, Green Bean And New Potato Salad

  1. Toss the potatoes in a little olive oil and roast at 350u0b0 for 30 to 45 minutes until just done, then cool.
  2. Steam green beans, then cool.
  3. Mix lemon juice, vinegar, mustard, garlic, olive oil, salt and pepper to taste.
  4. Slice potatoes thinly and toss with green beans, onion and dressing.
  5. Flake the trout and toss into the salad.
  6. Garnish with chopped parsley.
  7. Serves 4.
