Smoked Trout, Green Bean And New Potato Salad
- 1 whole boneless smoked trout
- 6 new red potatoes
- 1/2 lb. green beans
- 1/2 red onion, sliced
- 3 Tbsp. lemon juice
- 2 Tbsp. balsamic vinegar
- 1 1/2 tsp. Dijon mustard
- 1/4 c. olive oil
- 1 large clove garlic, minced
- 2 Tbsp. chopped parsley
- salt and pepper
- Toss the potatoes in a little olive oil and roast at 350u0b0 for 30 to 45 minutes until just done, then cool.
- Steam green beans, then cool.
- Mix lemon juice, vinegar, mustard, garlic, olive oil, salt and pepper to taste.
- Slice potatoes thinly and toss with green beans, onion and dressing.
- Flake the trout and toss into the salad.
- Garnish with chopped parsley.
- Serves 4.
