Tomato Crouton Salad
- 4 c. cubed French or Italian bread
- 1 Tbsp. olive oil
- 1 tsp. dried oregano
- salt and pepper to taste
- 2 cucumbers, peeled and seeded
- 6 ripe tomatoes, cut into 6ths
- 1/4 c. chopped shallots
- 1/4 c. chopped parsley or basil
- 3 Tbsp. olive oil
- 3 Tbsp. vinegar
- 2 bunches arugula, watercress or romaine
- Preheat
- oven
- to 350u0b0.
- Toss bread cubes with 1 tablespoon olive
- oil,
- oregano,
- salt and pepper.
- Bake in single layer
- for 20
- minutes or until golden.
- Cut cucumbers into 1 inch cubes. Combine with all other ingredients except arugula and
- bread cubes.
- Just
- before
- serving, add bread cubes and toss.
- Divide arugula among 6 plates and top with salad.
