Microwave Crunchy Caramel Corn

  1. In large microwave bowl, combine popcorn, cereal and nuts.
  2. In 4-cup microwave bowl, combine brown sugar, margarine, syrup and salt; microwave on High for 1 1/2 minutes.
  3. Stir, microwave on High for 45 seconds to 2 minutes, or until mixture comes to rolling boil.
  4. Stir in vanilla and baking soda (mixture will become foamy). Pour over popcorn mixture and toss to coat.
  5. Spread 1/2 of mixture in ungreased 12 x 8-inch pan.
  6. Microwave on High for 2 to 3 minutes or until popcorn is evenly coated, stirring every minute.
  7. Spread on foil to cool.
  8. Using same dish, repeat with remaining popcorn mixture.
  9. Allow to dry for 2 hours.
  10. Store tightly in covered container.
