Company Casserole No. 2000
- 1 lb. lean ground beef
- 1/2 lb. linguica
- 1/2 lb. garlic sausage
- salt and pepper to taste
- 1 pkg. spaghetti sauce mix
- 3 (8 oz.) cans tomato sauce
- 1 (6 oz.) can tomato paste
- 1 pkg. (8 to 10) twistee macaroni
- 2 pkg. frozen chopped spinach
- 1 beaten egg
- 2 c. sour cream
- 1 c. shredded Parmesan
- Brown the meats until crumbly (remove casing from Italian sausage).
- Add the salt, pepper and spaghetti sauce.
- Mix tomato sauce and tomato paste and combine thoroughly.
- Bring to a boil, reduce heat and simmer 30 minutes.
- Cook the macaroni according to the directions on the package; drain and combine with cooked sauce.
- Spread 1/2 the meat mixture over the bottom of 2 1/2-quart casserole.
- Top with 1/2 drained spinach.
- Dot evenly with 1/2 the sour cream mixed with grated sharp Cheddar cheese.
- Spread to make an even layer.
- Sprinkle with 1/2 Parmesan cheese.
- Repeat layers, ending with Parmesan cheese.
