Honey-Glazed Carrots

  1. In a medium saucepan, combine carrots, lemon peel strip, honey and salt.
  2. Add enough cold water to cover carrots.
  3. Bring to a boil over medium-high heat, boiling until the liquid nearly evaporates, about 15 minutes.
  4. Reduce heat to medium, stir carrot mixture until coated with glaze.
  5. Remove pan from heat.
  6. Add lemon juice, tarragon (optional), nutmeg and pepper to pan; mix well.
  7. Place carrot mixture in serving dish, garnish with grated lemon peel and serve immediately.
