Smoked Haddock Rosti Starter

  1. Rinse onion in cold water, dry in a dish towel.
  2. Dry Potatoes in a dish towel.
  3. Mix onion, garlic and potatoes.
  4. Slice Haddock.
  5. Heat oil, add 1/2 of potato mixture, press down, season.
  6. Add a layer of fish.
  7. Sprinkle with lemon, parsley and pepper.
  8. Top with remaining potatoes, press down firmly.
  9. Cover with tin foil and cook ovr lowest heat for 25-30 minutes.
  10. Pre heat Grill 2-3 minutes before the end of cooking time.
  11. Remove tin foil and brown under the grill.
  12. Serve on a warmed dish with Salad, Creme Fraiche and Lemon Wedges.
