Chicken A La King(Low-Fat)
- 4 1/2 oz. jar sliced mushrooms, drained
- 1 c. lower sodium chicken broth
- 1/2 c. chopped green or red peppers, chopped
- 1 (12 oz.) can evaporated skim or low-fat milk
- 1/3 c. all-purpose flour
- 1 1/2 c. cubed cooked chicken or turkey
- 1/4 c. diced pimento
- 1/4 c. water
- 1 tsp. Worcestershire sauce
- 1/8 tsp. pepper
- 4 English muffins, split and toasted
- In a medium saucepan, stir together chicken broth and peppers. Bring to boiling; reduce heat.
- Cover and simmer until the vegetables are tender.
- Do not drain.
- In a mixing bowl, gradually stir the milk into the flour until smooth.
- Stir into vegetable mixture.
- Cook and stir until thickened and bubbly.
- Cook and stir for 1 minute more.
- Stir in canned mushrooms, chicken or turkey, pimento, water, Worcestershire sauce and pepper.
- Heat through.
