Sweet Potato Nut Bread

  1. Cream butter, shortening and sugar.
  2. Add eggs, one at a time, mixing well after each addition.
  3. Blend in sweet potatoes.
  4. Sift together dry ingredients; add nuts.
  5. Stir into creamed mixture alternately with cold coffee.
  6. Pour batter into 2 greased 9 x 5 x 3-inch loaf pans and 8 greased muffin pan cups.
  7. Bake in moderate oven (375u0b0) for 1 hour for loaves and 25 minutes for muffins, or until they test done in center.
  8. Cool 10 minutes; remove from pan and cool completely.
  9. Makes 2 loaves, plus 8 muffins.
