Fajitas
- 1 lb. turkey, chicken or pork, cut into strips
- 2 cloves garlic, crushed
- 1/2 tsp. ground oregano
- 1/2 tsp. ground cumin
- 1 Tbsp. Lawry's seasoning salt
- 3 Tbsp. orange juice
- 2 Tbsp. vinegar
- dash of Louisiana hot sauce
- 1 Tbsp. oil
- 1 onion, sliced
- 1 bell pepper, sliced
- flour tortillas
- olive oil to cook tortillas
- sharp cheese, grated
- lettuce, shredded or chopped
- Marinate
- meat, using the garlic, cumin, oregano, salt, orange juice,
- vinegar
- and
- hot
- sauce
- for 15 minutes.
- In a Dutch oven,
- saute
- onion, bell pepper and meat for 5 minutes; set aside.
- Place
- some
- olive
- oil
- (or oil) in a skillet and heat. Quickly
- cook
- tortilla and form into a taco.
- Place on paper towels
- to drain.
- Don't overcook and make it too crisp. Ladle meat into shells and garnish with cheese and lettuce.
