Banana Apricot Bread
- 1 c. chopped dried apricots
- 1/4 c. sherry
- 1 1/4 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 6 Tbsp. butter or margarine
- grated rind of 1 lemon
- 2/3 c. white sugar
- 2 eggs
- 1/2 c. mashed banana
- Soak apricots in sherry for 1 hour.
- Drain and discard sherry. Sift flour, baking powder and baking soda twice.
- Set aside.
- Cream butter, lemon rind and sugar together.
- Beat in eggs one at a time. Beat well after each addition.
- Fold in fruits alternately with flour mixture.
- Place mixture into a greased and lined 4 x 8-inch loaf pan.
- Bake at 350u0b0 for 1 hour or until cooked.
- Cool on wire rack.
- Ice, if desired, with icing of your choice.
- Makes 1 loaf.
