Pasta And Shrimp Salad
- 2 lb. unpeeled fresh shrimp
- 2/3 (16 oz.) pkg. vermicelli
- 1 c. sliced ripe olives
- 1 c. sliced water chestnuts
- 3 Tbsp. sugar
- 3/4 tsp. salt
- 3 c. boiling water
- 1 c. diced celery
- 1 c. sliced fresh mushrooms
- 1 1/2 c. mayonnaise
- 2 Tbsp. vinegar
- 1/4 tsp. pepper
- Add shrimp to boiling water.
- Cover, turn off heat and simmer 5 minutes. Drain and rinse with cold water.
- Peel and devein shrimp. Cook vermicelli according to package directions, rinse with cold water and drain.
- Combine shrimp and vermicelli.
- Add celery, olives, mushrooms and water chestnuts.
- Combine mayonnaise, sugar, vinegar, salt and pepper. Pour over pasta mixture and toss. Cover and chill.
- Yields 8 servings.
