Okra Soup With Fou Fou

  1. For Soup:.
  2. Saute onion and chile peppers in hot oil 1 minute.
  3. Add okra and tomatoes; reduce heat and simmer, stirring occasionally for 5 minutes.
  4. Add 2 cups water, broth and tomato paste; return to a simmer and cook, stirring often for about 7 minutes.
  5. Stir in spinach, salt, pepper, and sage and simmer for 10 minutes, stirring often.
  6. Serve with Fou Fou on top.

  8. Bring 6 cups water to a boil and add salt.
  9. Gradually add Cream-of-Wheat, stirring constantly.
  10. Reduce heat to low and cook, stirring vigorously, 3-4 minutes, or until thick.
  11. Press into a 1 quart bowl sprinkled with cold water.
  12. Invert onto a serving plate and serve immediately.
