Creamed Fish

  1. Scald milk.
  2. Put onion, parsley and thyme in a cheesecloth and cook slowly in the milk one hour or more.
  3. Remove seasoning.
  4. Melt the butter.
  5. Add the flour and brown for a few minutes.
  6. Add the milk to the butter and flour with a bit of salt and the nutmeg and egg yolk.
  7. Cook the halibut with salt and lemon juice.
  8. Flake when done.
  9. Layer some sauce in the bottom of a baking dish, then a layer of fish.
  10. Season lightly with salt and pepper, then add more sauce and fish and sauce again.
  11. Sprinkle top with buttered bread crumbs and cover with Parmesan cheese.
