Ham And Corn Fritters With Sage
- 12 fritters
- salt and pepper
- 3 oz. ham (about 1/2 c.), diced
- 1/2 c. flour
- 1 scallion
- 2 eggs
- 4 Tbsp. butter
- 1/2 c. corn kernels
- 1/2 c. water
- 1/4 tsp. dried sage
- oil (for deep frying)
- Cut ham into small dice.
- Chop scallion.
- Cut butter in 4 chunks.
- Bring butter, water, 1/4 teaspoon salt and 1/8 teaspoon pepper to a boil in a saucepan and boil just until butter melts. Remove from heat and stir in flour all at once.
- Stir over low heat just until mixture is smooth and comes away from the sides of the pan in a ball.
- While still hot, transfer to a food processor or mixing bowl and process or beat in eggs, one at a time.
- Stir in the ham, scallion, corn and sage.
- Heat oil in large pot to 375u0b0. Drop the dough by heaping tablespoonfuls into the hot fat and fry until golden brown, 3 to 5 minutes.
- Drain on paper towels before serving.
