Ham And Corn Fritters With Sage

  1. Cut ham into small dice.
  2. Chop scallion.
  3. Cut butter in 4 chunks.
  4. Bring butter, water, 1/4 teaspoon salt and 1/8 teaspoon pepper to a boil in a saucepan and boil just until butter melts. Remove from heat and stir in flour all at once.
  5. Stir over low heat just until mixture is smooth and comes away from the sides of the pan in a ball.
  6. While still hot, transfer to a food processor or mixing bowl and process or beat in eggs, one at a time.
  7. Stir in the ham, scallion, corn and sage.
  8. Heat oil in large pot to 375u0b0. Drop the dough by heaping tablespoonfuls into the hot fat and fry until golden brown, 3 to 5 minutes.
  9. Drain on paper towels before serving.
