Date And Nut Bread
- 1 3/4 c. packed brown sugar
- 3 Tbsp. butter or margarine, softened
- 2 eggs
- 3 c. flour
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. sour milk or 1 Tbsp. vinegar plus milk to equal 1 c.
- 1/2 c. chopped nuts, lightly floured
- 1 1/2 c. dates, cut in small pieces
- Cream butter and brown sugar; add eggs, beating well.
- Combine flour, soda and salt and add alternately with milk.
- Stir in nuts and dates, mixing thoroughly.
- Spoon into 2 well-greased 9 x 5 x 3-inch loaf pans or five 16-ounce cans.
- Bake loaves in a preheated 350u0b0 oven for
- 60 minutes and cans in a 325u0b0 oven for 60 to 70 minutes, or until toothpick inserted in center comes out clean.
- Cool on rack for 10 minutes.
- Turn out of pans and continue cooling on rack.
- Makes 2 loaves.
