Almond-Flavored Pecan Cookies
- 1/2 c. whole wheat flour
- 1/2 c. unbleached white flour
- 1 tsp. baking powder
- 1/4 c. butter, cut into pieces
- 1/3 c. finely chopped pecans
- 1 egg, beaten
- 2 Tbsp. honey
- 1/2 c. white grape juice
- 1/2 tsp. vanilla extract
- 1 tsp. almond extract
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- Preheat oven to 350u0b0. Spray 2 baking sheets with vegetable spray.
- In a medium bowl, stir together the whole wheat flour, unbleached flour and baking powder.
- Cut butter into mixture with a pastry blender until mixture resembles crumbs.
- Mix in nuts.
- In a small bowl, beat together the eggs and honey.
- Add grape juice, extracts and spices. Stir into flour mixture.
- Drop by teaspoonfuls onto baking sheets.
- Bake for 10 minutes.
- Makes 36 cookies.
